Michelin is pleased to announce the arrival of the MICHELIN Guide in Hangzhou, whose the first restaurant selection will be presented on 30th May 2023. After Shanghai, Beijing, Chengdu and Guangzhou, Hangzhou becomes the fifth city located in China mailand to be spotted by the famous Michelin inspectors.

“Hangzhou is one of the most popular cities in China. Impressed by the uniqueness and cultural heritage of Hangzhou, Michelin inspectors have investigated its culinary scene for several years and are excited to celebrate the debut of the first MICHELIN Guide for Hangzhou. We hope the selection provides extra inspirations to food lovers when they plan dining experience in Hangzhou. At the same time, we recognize and celebrate top-notch restaurants and outstanding talents in the local culinary community,” said Gwendal Poullennec, International Director of the MICHELIN Guides.

With a strong cultural background, many cultural relics and historic architectures are found all over the city. Benefit from the development of tourism, food and wine scene is well established with a strong regional influence of Zhejiang province.

With its roots in 1900, the MICHELIN Guide has held firm to its founding mission – discover and make high-quality gastronomic destinations and unforgettable traveling experience available to all. In 1926, the Guide began to award MICHELIN Stars for dining establishments proposing the best culinary experiences and soon became a barometer of the culinary world.

A MICHELIN Star system of one, Two, and Three stars was introduced within the restaurant selection, with Three MICHELIN Stars, the top ranking, indicating exceptional cuisine that is worth a special journey, Two MICHELIN Stars excellent cooking that is worth a detour, and One MICHELIN Star high quality cooking that is worth a stop.

Be it in Paris, Tokyo, New York, or Shanghai, five universal criteria are considered when assessing restaurants: the quality of the ingredients, the harmony of flavors, the mastery of techniques, the personality of the chefs as expressed through their cuisine and, just as importantly, consistency both across the entire menu and over time.

Within the restaurant selection, the Bib Gourmand is another distinction handed out by the MICHELIN Guide, which is hugely popular with food lovers. Represented by an icon of the Michelin Man (also called Bibendum) licking his lips, the Bib Gourmand highlights a restaurant that offers good quality cooking at a decent price. Namely, a three-course meal below RMB 300 per guest (without drinks) .

The famous MICHELIN Guide inspectors are as well-known as the MICHELIN Stars. The role of inspectors was officially introduced in the 1930s. They are employees of Michelin and keep their identity in complete confidentiality. Most inspectors have received professional hospitality or culinary training from prestigious schools, all have worked in dining or hotel sectors for many years prior to become an inspector. Inspectors dine at restaurants anonymously to ensure the fairness and equality of their assessment. They book a table, order, eat, and pay just like any other customers. The independence and anonymity allow inspectors to focus on restaurant assessment however long it takes, which is an important approach that keeps the MICHELIN Guide as relevant today as it was over a century ago. Each decision to select and eventually award a restaurant within the Guide is a collective one based on multipe anonymous visits made by different inspectors.

Once officially announced, the first MICHELIN Guide for Hangzhou will be available on the MICHELIN Guide WeChat account, official website (guide.michelin.com) and the MICHELIN Guide App (IOS).
